Summer Dinner and Blueberry Crisp Recipe

Last night, I was feeling summer in a big way.  It was hot, we were setting up the kids pool, we mowed the lawn and the sunshine was out in full force.

I told my husband that I wanted to make fried chicken.  He immediately said, “Get inside!”

I know fried chicken is a great deal of work, and it is not exactly a cool thing to make, but it is a summer dish.  And you cannot beat cold fried chicken on a hot summer day.

So when I went inside, I became inspired to create a summer meal that would knock your socks off. 

First I delved into a Blueberry Crisp, and more on that later!  Next, I prepared homemade vanilla ice cream to go along with the blueberry crisp.  Dessert complete.

I get a wonderful magazine called Cook’s Country, and they had a very intriguing potato recipe.  This recipe called for red potatoes, salt and vinegar.  All I had were russets, and I spruced up the vinegar with garlic, onion and crushed red pepper.  Hands down one of the best potato recipes ever!

Then I headed outside and cut some lettuce from our garden.  I chopped up plenty of delicious veggies to go on top and made a very tasty honey mustard dressing.

Finally, I fried up the chicken!

And when it was all done, we ate a lot of good summer time food!

I know there was a great deal of food I cooked, and many recipes that you may want, but I thought I would leave you with one.  The Blueberry Crisp, and believe me it is to die for.  My husband hates fruit and said it was the best fruit dish he ever had.  He actually cleaned his plate. 

First get four to six cups of frozen or fresh blueberries

Next, combine 1 cup sugar, with cinnamon to taste, and sprinkle all over the blueberries.

Get six tablespoons water, and juice one lemon.  Mix together and pour over blueberries.

For the crust, take one cup of sifted flour, 3/4 cup sugar, 1 teaspoon salt and 1/2 cup of butter cubed.

Cut in the butter until mixed in.

Spread over the top of the blueberries.

Finally take a couple of handfuls of rice chex, and crumble over the top.

Bake for 40 minutes and serve with homemade vanilla ice cream.
